Initially running a wine bar in Montreal, Patrick Piuze moved to Burgundy and became entrenched in viticulture. He developed and honed his winemaking skills with Leflaive, Jean-Marc Brocard, and Jean-Marie Guffens before striking out on his own. Though his first vintage as owner/winemaker was just in 2008, Piuze already has the makings of a legendary producer. 

From a plot on Chablis' western edge, Piuze's old-school Plateau de la Cornasse Chablis is medium to full-bodied, fleshy, and round with bright acidity. The silky palate provides a good depth of flavors of green apple, orange blossom, wet stone, white peach, and citrus peels with a good lick of minerality on the finish. Pair with a roasted chicken.
