Peru is a country filled with culture and history, especially when it comes to Ancient Grains. Native to Peru are 52 different varieties of corn. The folks at Don Michael found a variety of Black Corn that grows at over 10,000 feet above sea level and makes an amazing whiskey. The main water source at the distillery is an underground aquifer of Lurin that is sourced from the Andes Mountains and runs directly below the distillery.
All barrels are new white oak barrels from the Unites States. This special style of whiskey has been recognized by the Peruvian government as "Andean Whiskey" (much like "Japanese Whiskey" has become a common defined term).
