The Chino maguey is entirely produced from wild agave cupreata. This wild agave comes from the family estate of our Maestro Mezcalero, Patricio Arreaga Pena. Patricio's methods are very gentle, appliying only light touches during initial fermentation, which results in a much longer process, more developed flavors and a beautiful expression of this wild agave. Approximately 80%
bagazo to 20% water ratio is used in the tinas for fermentation, also contributing to its depth. Overall this expression is a beautiful roller coaster, full of pine, citrus, and a nice funk on the nose.
